Blue Cheese Stuffed Shrimp

Ingredients :
  • 6 cups water
  • 24 unpeeled jumbo fresh shrimp
  • 1 (3 oz.) package cream cheese, softened
  • 1 oz. blue cheese, crumbled
  • 1/2 tsp prepared mustard
  • 1 tsp green onions, finely chopped
  • 3/4 cup fresh parsley, finely chopped
Directions :
  1. Bring water to boil.
  2. Add shrimp and cook 3-5 minutes.
  3. Drain well and rinse with cold water.
  4. Chill. Peel and devein shrimp.
  5. Butterfly shrimp, leaving tails intact.
  6. Combine cream cheese, blue cheese, mustard, and green onions in bowl.
  7. Stuff each shrimp with 1 teaspoon of mixture.
  8. Roll cut side of shrimp in parsley.
  9. Cover and chill at least 1 hour.
