Blue Cheese Stuffed Shrimp

Ingredients :
- 6 cups water
- 24 unpeeled jumbo fresh shrimp
- 1 (3 oz.) package cream cheese, softened
- 1 oz. blue cheese, crumbled
- 1/2 tsp prepared mustard
- 1 tsp green onions, finely chopped
- 3/4 cup fresh parsley, finely chopped
Directions :
- Bring water to boil.
- Add shrimp and cook 3-5 minutes.
- Drain well and rinse with cold water.
- Chill. Peel and devein shrimp.
- Butterfly shrimp, leaving tails intact.
- Combine cream cheese, blue cheese, mustard, and green onions in bowl.
- Stuff each shrimp with 1 teaspoon of mixture.
- Roll cut side of shrimp in parsley.
- Cover and chill at least 1 hour.
