Shrimp Jambalaya

Ingredients :
  • 3/4 pound fresh or frozen medium shrimp, cooked, peeled, cleaned, or 3 (4.5 oz) cans shrimp
  • 1/4 cup chopped bacon
  • 3 tbls chopped onion
  • 3 tbls chopped green pepper
  • 1 clove garlic, finely chopped
  • 1 tbls all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp Worchestershire sauce
  • Dash cayenne pepper
  • Dash paprika
  • 1/2 cup pitted ripe olives, sliced crosswise
  • 1 (16 oz) can tomatoes
  • 2 cups cooked rice
Directions :
  1. Thaw frozen shrimp or drain canned shrimp.
  2. Fry bacon until crisp.
  3. Add onion, green pepper, and garlic.
  4. Cook until tender.
  5. Blend in flour and seasonings, then add olives and tomatoes and cook until thickened, stirring constantly.
  6. Stir in rice and shrimp.
  7. Heat through.
