Cajun Style Corn And Shrimp Soup

Ingredients :
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 small onion, chopped
- 1/3 cup green onions, chopped
- 2 quarts hot water
- 2 cans (14.5 oz each) stewed tomatoes, cut up
- 4 cans (16 oz. each) whole kernel corn, drained
- 2 pounds uncooked shrimp, peeled and deveined
- Salt and pepper to taste
Directions :
- In heavy 8 quart pot, combine oil and flour until smooth.
- Cook over medium high heat for 5 minutes, stirring constantly.
- Reduce heat to medium and cook and stir for 5 additional minutes, or until mixture is reddish brown.
- Add onions and cook for 5 minutes, stirring often.
- Turn heat to high.
- Add hot water, tomatoes, and corn.
- Bring to boil, then reduce heat.
- Cover and simmer 15 minutes.
- Add shrimp and simmer about 5 additional minutes, or until shrimp are done.
- Season to taste.
