Cajun Style Corn And Shrimp Soup

Ingredients :
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 small onion, chopped
  • 1/3 cup green onions, chopped
  • 2 quarts hot water
  • 2 cans (14.5 oz each) stewed tomatoes, cut up
  • 4 cans (16 oz. each) whole kernel corn, drained
  • 2 pounds uncooked shrimp, peeled and deveined
  • Salt and pepper to taste
Directions :
  1. In heavy 8 quart pot, combine oil and flour until smooth.
  2. Cook over medium high heat for 5 minutes, stirring constantly.
  3. Reduce heat to medium and cook and stir for 5 additional minutes, or until mixture is reddish brown.
  4. Add onions and cook for 5 minutes, stirring often.
  5. Turn heat to high.
  6. Add hot water, tomatoes, and corn.
  7. Bring to boil, then reduce heat.
  8. Cover and simmer 15 minutes.
  9. Add shrimp and simmer about 5 additional minutes, or until shrimp are done.
  10. Season to taste.
