Ginger And Garlic Shrimp Skewers

Ingredients :
  • 4 slender scallions
  • 4 plum tomatoes, seeded and chopped
  • 4 teaspoons fresh lemon juice
  • 4 teaspoons finely chopped peeled ginger
  • 2 garlic cloves, chopped
  • 1 jar pickled jalapeno pepper, trimmed, seeded, and finely chopped
  • 2 teaspoons brown sugar
  • 1/2 teaspoon salt
  • 24 jumbo shrimp, peeled and deveined
  • 24 7-inch bamboo skewers
Directions :
  1. Soak 2 dozen 7 inch bamboo skewers in cold water for at least 30 minutes.
  2. Mince scallions, keeping white and green parts separate.
  3. In bowl of food processor, combine scallion whites, tomatoes, lemon juice, ginger, garlic, jalapeno, brown sugar, and salt.
  4. Process until well combined.
  5. Transfer mixture to large bowl and add shrimp.
  6. Allow to marinate at room temperature, turning frequently, for 20 minutes.
  7. Thread shrimp onto skewers, 1 shrimp per skewer.
