Ginger And Garlic Shrimp Skewers

Ingredients :
- 4 slender scallions
- 4 plum tomatoes, seeded and chopped
- 4 teaspoons fresh lemon juice
- 4 teaspoons finely chopped peeled ginger
- 2 garlic cloves, chopped
- 1 jar pickled jalapeno pepper, trimmed, seeded, and finely chopped
- 2 teaspoons brown sugar
- 1/2 teaspoon salt
- 24 jumbo shrimp, peeled and deveined
- 24 7-inch bamboo skewers
Directions :
- Soak 2 dozen 7 inch bamboo skewers in cold water for at least 30 minutes.
- Mince scallions, keeping white and green parts separate.
- In bowl of food processor, combine scallion whites, tomatoes, lemon juice, ginger, garlic, jalapeno, brown sugar, and salt.
- Process until well combined.
- Transfer mixture to large bowl and add shrimp.
- Allow to marinate at room temperature, turning frequently, for 20 minutes.
- Thread shrimp onto skewers, 1 shrimp per skewer.
