Tomato Soup Gratinee

Description :
A favorite tomato soup and it freezes beautifully.
Ingredients :
- 1/2 cup butter or margarine
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried thyme, crumbled
- 1/2 teaspoon dried basil, crumbled
- 8 medium tomatoes, peeled and chopped (or 1 28 oz. can and 1 15 oz. can tomatoes, drained, and chopped)
- 3 tablespoons tomato paste
- 3 3/4 cups chicken stock, divided
- 1/4 cup all-purpose flour
- Salt and pepper, to taste
- 1 teaspoon sugar
Directions :
- In large saucepan or dutch oven, melt butter or margarine and olive oil over medium heat.
- Add onion, dill, thyme, and basil.
- Cook, stirring occasionally, until onion is tender and golden.
- Add tomatoes and paste and simmer 10 minutes.
- In separate bowl, combine 1/2 cup chicken stock and flour.
- Whisk until smooth.
- Add to saucepan.
- Add remaining chicken stock.
- Simmer, stirring frequently, for 30 minutes.
- Puree in blender.
- Return to pan.
- Season with salt and pepper, to taste.
- Stir in sugar.
- Heat thoroughly.
