Tomato Soup Gratinee

A favorite tomato soup and it freezes beautifully.
Ingredients :
  • 1/2 cup butter or margarine
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried thyme, crumbled
  • 1/2 teaspoon dried basil, crumbled
  • 8 medium tomatoes, peeled and chopped (or 1 28 oz. can and 1 15 oz. can tomatoes, drained, and chopped)
  • 3 tablespoons tomato paste
  • 3 3/4 cups chicken stock, divided
  • 1/4 cup all-purpose flour
  • Salt and pepper, to taste
  • 1 teaspoon sugar
Directions :
  1. In large saucepan or dutch oven, melt butter or margarine and olive oil over medium heat.
  2. Add onion, dill, thyme, and basil.
  3. Cook, stirring occasionally, until onion is tender and golden.
  4. Add tomatoes and paste and simmer 10 minutes.
  5. In separate bowl, combine 1/2 cup chicken stock and flour.
  6. Whisk until smooth.
  7. Add to saucepan.
  8. Add remaining chicken stock.
  9. Simmer, stirring frequently, for 30 minutes.
  10. Puree in blender.
  11. Return to pan.
  12. Season with salt and pepper, to taste.
  13. Stir in sugar.
  14. Heat thoroughly.
