Apricot Macaroons

Ingredients :
  • 3 cups sliced blanched almonds
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • 1/4 cup Apricot jam
Directions :
  1. Preheat oven to 350°F.
  2. In food processor, finely grind almonds, sugar, and salt.
  3. Add egg whites and vanilla.
  4. Pulse until dough forms into a ball.
  5. With wet hands, shape level tablespoonfuls of dough into balls (dough will be sticky).
  6. Place on lined baking sheets.
  7. Flatten slightly.
  8. Using lightly floured end of wooden spoon, or thumb, make indentation in center of each ball.
  9. Bake, rotating sheets halfway through, until golden brown, 15-20 minutes.
  10. Let cool 5 minutes, then transfer cookies to wire rack.
  11. While cooling, warm apricot jam in microwave until slightly liquefied and easy to spoon, check every 10 seconds.
  12. Spoon jam into indentations.
