Cajun Style Fish Fillets

Ingredients :
  • 1 tablespoon vegetable oil
  • 1 small green pepper, diced
  • 1/2 teaspoon dried oregano leaves, crushed
  • 1 can (10 3/4 oz.) Condensed Tomato Soup
  • 1/3 cup water
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon ground red pepper
  • 1 pound firm white fish fillets (cod, haddock, or halibut)
Directions :
  1. In medium skillet over medium heat, heat oil.
  2. Add green pepper and oregano and cook until tender crisp, stirring often.
  3. Add soup, water, garlic powder, black pepper, and red pepper.
  4. Heat to a boil.
  5. Place fish fillets in soup mixture.
  6. Reduce heat to low.
  7. Cover and cook 5 minutes, or until fish flakes easily with frork.
  8. Serve over rice if desired.
