Barbecued Brown Rice Junk

Description :
Barbecue sauce gives this rice dish a real kick. The flavors of this side dish are very bold and it should be served with other bold-flavored foods. It goes very will with grilled or barbecued meats
Ingredients :
- 1 1/2 cups Brown rice
- 3 3/4 cups Beef broth
- 1 1/2 teaspoons Salt
- 1/2 teaspoon Ground black pepper
- 8 slices Bacon, cooked and crumbled
- 1 medium Onion, diced
- 2 cups Ham, diced (about 1/2 inch chunks)
- 2 tablespoons Olive oil, optional
- 1 cup Sweet Baby Rays Honey Chipotle BBQ Sauce
Directions :
- In a 3 quart sauce pan, bring broth to a boil over medium-high heat.
- Add brown rice, salt and pepper.
- Bring back to a boil, cover and reduce heat and simmer until the broth is absorbed, about 45 minutes.
- While rice is cooking, fry bacon in a non-stick skillet until crisp. Drain on paper towels.
- In your non-stick skillet with the bacon drippings, saute onion and ham until onion begins to caramelize. Drain on paper towels. (If desired, you may use olive oil instead of bacon drippings to saute the onion and ham.)
- When rice has finished cooking, pour it into a large bowl.
- Crumble and add the bacon and the onion and ham.
- Add one cup of Sweet Baby Rays Honey Chipotle BBQ Sauce.
- Mix thoroughly and serve hot.
- If Sweet Baby Ray\'s Honey Chipotle BBQ Sauce is unavailable, you can use your favorite barbecue sauce instead.
