Cherry Vanilla Cookies

Description :
A Strong Flavor of Vanilla--With A Suble Undertone of Almond and A Tart Cherry Finish
Ingredients :
  • 2 cups cherries, dried, tart and plumped*
  • 3 1/2 cups all-purpose flour
  • 1 tbsp. baking powder
  • 1 cup butter, softened
  • 1 1/2 cups C&H Pure Cane Granulated Sugar
  • 1 tbsp. vanilla
  • 1/2 tsp. almond extract
  • 2 eggs
  • 1/3 to 1/2 cup C&H Pure Cane Granulated Sugar (for rolling cookies)
Directions :
  1. Prehead oven to 375°F. Line cookie sheet with parchment paper or spray lightly with baking spray. In medium bowl, whisk flour and baking powder together; set aside. In large bowl, beat butter and sugar. Add vanilla, almond extract and eggs; beatuntil smooth. Slowly add dry ingredients and mix well. Stir in cherries. Scoop one tablespoon of dough and roll ball in sugar to coat. Place two inches apart and bake until firm (pale on top and golden along the bottom edge), 8-10 minutes.* To plump cherries: Cover with hot water and let stand 10-15 minutes until cherries are soft; drain and pat dry.
