Holiday Pork Roast with Ginger

Ingredients :
  • 5lb Pork Loin
  • 1 teaspoon minced garlic
  • 1 teaspoon crumbled dried sage leaf
  • 1 tablespoon minced ginger
  • 1/4 teaspoon Salt
  • 1/3 cup Apple jelly
  • 1/2 teaspoon hot sauce
  • 2 sliced medium Carrots
  • 2 siced medium Onions
  • 1 3/4 cups Water, divided
  • 1 teaspoon Browning and seasoning sauce
Directions :
  1. Combine ginger, garlic, sage and salt and rub over pork.
  2. Place in shallow roasting pan.
  3. Roast in preheated 325 degree oven for 1 1/2 hours.
  4. Remove from oven and score meat in diamond pattern.
  5. Combine jelly and hot sauce sauce.
  6. Spread generously over roast.
  7. Arrange carrots and onions around meat and add 1 cup water.
  8. Roast 1 hour longer or until meat thermometer registers 170 degrees.
  9. Remove roast to serving platter and keep warm.
  10. Skim fat from dripping in pan and discard.
  11. Puree vegetables and pan liquids in blender or food processor.
  12. Return to roasting pan.
  13. Stir in remaining 3/4 cup water and browning sauce and heat.
  14. Serve with roast.
