Crabmeat Balls

Ingredients :
  • 1/2 cup tomato juice
  • 1 egg, beaten
  • 1 cup dry bread crumbs
  • 1/2 tsp chopped parsley
  • 1/2 tsp chopped celery
  • 1 (6.5 oz) can crabmeat, flaked
  • Dash salt and pepper, to taste
  • Vegetable oil
Directions :
  1. Mix tomato juice and egg.
  2. Add bread crumbs, seasonings, parsley, celery, and crabmeat.
  3. Mix thoroughly and roll into balls.
Coating
Ingredients :
  • 1 egg, slightly beaten
  • 3/4 cup fine, dry bread crumbs
Directions :
  1. Dip each ball into egg, then dry bread crumbs.
  2. Fry in vegetable oil until golden.
  3. Serve with toothpicks.
