
Capers and salt

Capers are collected in the month of May. There are aplenty in Sicily. Local custom is going to collect the flowers still closed from the plants of capers. Are widely used in Sicilian recipes.

Plant
It begins with the collection of flower buds still closed. You have to be very careful during the harvest, so as not to damage the plant.
Flower buds
After picking up the flower buds, we remove the leaves and leave only 1 cm of stem capers.
Salt
After having thoroughly separated from stems and leaves, we put the capers in a bowl with plenty of raw salt. Do not wash the capers.
Containers
Stir in the capers and salt at least 2 times a day and for 3-4 days. Now put the capers in airtight containers. Store containers away from the Sun. Wash the capers before using them.
