Capers and salt
Capers are collected in the month of May. There are aplenty in Sicily. Local custom is going to collect the flowers still closed from the plants of capers. Are widely used in Sicilian recipes.

Flower budsAfter picking up the flower buds, we remove the leaves and leave only 1 cm of stem capers.
SaltAfter having thoroughly separated from stems and leaves, we put the capers in a bowl with plenty of raw salt. Do not wash the capers.
